Recipe: Mushroom Split Pea Soup
Bring some warmth into your sukkah with this hearty bowl of nourishing soup!
2 tablespoons oil
1 onion, diced
6 stalks celery, diced
2 tablespoons tomato paste
8 oz mushrooms, diced
2 zucchinis, diced
2 tablespoons salt
1 teaspoon onion soup mix
1/4 teaspoon black pepper
1/2 cup green split peas
1/2 cup yellow split peas
Heat the oil over medium heat. Add the diced onions and celery. Sauté until softened. Add the tomato paste and sauté for two more minutes. Add the mushrooms, zucchini, salt, soup mix, and black pepper. Allow all the vegetables to steam for fifteen minutes. Keep mixing. Pour twelve cups of water into the pot and add the split peas. Bring to a boil. Lower the heat and cover. Simmer for forty-five minutes.
