Pomegranate Honey Salmon
Add a subtle sweetness and fruitiness to your salmon to make it outrageously delicious. The flavors are soft yet tasty without being too overpowering to the delicate flavor of salmon.
6 slices salmon fillet
1 tablespoon oil
4 cloves garlic, minced
1/3 cup honey
1/3 cup pomegranate juice
2 teaspoons lemon juice
2 teaspoons salt, divided
1/4 teaspoon onion powder
1/8 teaspoon black pepper
2 tablespoons fresh parsley, shredded
Pomegranate seeds
Heat the oil over medium-low heat. Add the minced garlic and sauté for two to three minutes or until the garlic is lightly toasted. Add in the honey, pomegranate juice, lemon juice, one teaspoon of salt, onion powder, and black pepper. Mix well and raise the heat to medium-high. Bring the mixture to a boil while stirring. Allow the mixture to cook down for about five to ten minutes. Let the mixture cool down completely.
Place the salmon on a lined and greased baking sheet. Salt the fish with the rest of the salt. Brush half of the cooled mixture over the salmon. Bake at four hundred twenty-five degrees for ten minutes. Brush the rest of the mixture over the fish and bake for an additional eight minutes. Top with pomegranate seeds and shredded parsley.
