One Pot Chickpea Veggie Dinner
I think what everyone is currently looking for are easy dinner ideas. Bonus points if it can be done in one pot. This recipe covers all the bases! It’s a family favorite that is packed with flavor and takes about forty minutes to prepare!
Chicken:
6-8 thin sliced chicken cutlets
4 tablespoons oil
1 teaspoon kosher salt
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
Vegetables:
4 tablespoons oil
3 bell peppers
2 smalls zucchinis
Canned chickpeas
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/8 teaspoon crushed red pepper flakes (optional)
Cut the chicken into thin strips and place in a large bowl with the oil and spices. Set aside.
Heat a large pan over medium-high heat and add in the oil. Once the oil is heated, add the peppers. Sauté for about ten minutes before adding in the chickpeas, squash, and seasoning. Sauté until the vegetables are softened.
Add in the chicken strips and cover the pot. Lower the heat to medium heat and cook for about twenty minutes (stir once or twice in between) or until the chicken is fully cooked through.
